Stuffed Cucumber

Ingredients

Fresh Cucumbers Fresh Bread Crumbs, Onion, Green Onions, Thyme

Sweet Pepper and Shallot Optional, Olive Oil

Salt, Pepper, and Garlic Powder to Taste

Method

Peel cucumbers, cut peeled cucumbers in to 2 or 3 equal pieces

Cut each piece in half lengthwise. Use a melon baller or a spoon and scoop out the seeds, being careful not to bore through the base of the cucumber. Steam cucumber or boil in a small amount of water until tender.

Prepare the bread stuffing as above. Chop the seasoning and sauté in olive oil in a frying pan. When seasoning is cooked but not burnt, add the bread crumps and continue to cook. Add meat stock or water as needed to moisten the stuffing to the desired texture. When sufficiently cooked fill the space in each piece of cucumber with stuffing, then dot the top of each with butter or margarine. Bake until stuffing is brown at 350 degrees Fahrenheit
