Cauliflower Green Pepper Red Pepper Orange Pepper Yellow Pepper Margerine or Butter
Method –Make cauliflower come alive with these brilliantly colored peppers
Remove any blemishes from the cauliflower. Remove seeds and stems from the peppers. Wash them all thoroughly. Break the cauliflower into florets, first by cutting off the stem at the base, then cutting across the base just above where the florets are attached to the base. Remove the seeds from the pepper halves and cut into strips lengthwise or as desired.
Place water in a large enough saucepan about 2 inches in depth and bring to a rapid boil.
Place the florets and pepper strips in a steamer basket. Lower the steamer basket into the boiling water making sure that the vegetables are not immersed in the water. Cover the saucepan. Keep the saucepan on high heat and maintain the rapid boiling. Let steam for 5 minutes. Remove the cover at least the last half of cooking (after the water resumes boiling)to let the substances responsible for the unwanted brown color and the sulfurous smell escape in the steam.
Alternately vegetables may be cooked in a minimum amount of water that will be absorbed at the end of the cooking process to avoid losing nutrients.
Test for doneness, at this stage the vegetables should be crisp and colorful. Remove from the heat. Add butter or margarine as desired.
Serve immediately.
