Spinach with Onions and Pinenuts

Ingredients

Spinach Fresh or Frozen                                       Chopped Fresh Onions

Olive or other oil                                                               

Pinenuts

Method

Sauté the chopped onions in oil , add the chopped spinach and continue to sauté. Add water just enough to cover the spinach and let cook to the desired tenderness and the water is absorbed. Add more water if necessary to complete cooking.  Add more oil or margarine and salt if needed. When cooked to your satisfaction, transfer to serving dish.

Sauté the pinenuts in oil until golden brown.  This takes literally seconds.  Take care not to burn the nuts.  Drain the nuts on absorbent paper remove excess oil. Sprinkle on top the cooked spinach.  Serve hot.
